Wilde Thyme has built up strong partnerships with local producers and suppliers.  We have total control of what we buy and can trace it back to the farm and the animal.

Our key suppliers are as follows:

  • Simon Howie - all Scottish meats
  • St Brides Poultry  - Free range chicken and duck
  • George Campbell and Sons  - all Scottish fish and shell fish products  
  • Highland Game - Game products and wild venison
  • Clarks Speciality Foods  - all our Scottish cheeses, mushrooms and deli products   
  • The Handy Shop - fruit and vegetables 
  • D&D Dairies -  milk and dairy produce
  • Dalchonzie Fruit Farm - soft fruits and preserves 
  • Campbell’s Bakers - bread products  
  • Braehead Foods - specialist ingredients
  • Summer Harvest - cold pressed rapeseed oil

We are continually looking to source new Scottish growers and producers. Where possible we use the name/story of the produce in our menus.

Beef, lamb and pork are supplied by our butcher, Simon Howie, and they source the following for us to our specific requirements:

  • All our beef comes through Mather’s of Inverurie, breed AA cross Charlois/Simmentel sourced from Aberdeenshire. Age of animal is 24/26 months old and aged for  3/4 weeks
  • Our lamb is sourced from Perthshire, Highlands and Caithness areas. The age of the lambs are 5/6 months old and are aged from 7/10 days
  • Pork products are sourced from Ardrossan and Perthshire. The age of the animals are 6/7 months

Fish and shellfish comes from George Campbell and Sons, and they source our produce from the following areas:

  • Crab from Buckie, East Neuk and Fife
  • Scallops hand-dived from Shetland Isles and Crinan
  • Creel-caught langoustines from the Isle of Skye and Crannog
  • Oysters from Loch Etive and Loch Sween
  •  Wild salmon from The Tay
  •  Haddock is landed in Aberdeen or Peterhead and is smoked by George Campbell and Sons using a traditional family recipe

 Red fruits and preserves from the local Dalchonzie fruit farm.

Along with our food we are alway looking at how we present it and work with several Scottish companies to produce bespoke serving dishes and canapé boxes for our foods. This in turn links into delivering a complete bespoke product for our customers’ menus.
